PEAR, ROCKET, WALNUT & PARMESAN SALAD RECIPE

This is one of my default salads.  Super easy, quick and delicious.  It is even a winner for those fussy ones who usually don't like green leafy things.



Ingredients:
1 x Pear, ripe
50g Rocket
Hand full of Walnuts
20g Parmesan
1 tablespoon Extra Virgin Olive Oil
1/2 tablespoon Balsamic Vinegar



Method:
Core and finely slice the pear.

In a large mixing bowl, place washed and dried rocket and sliced pear.

Using a vegetable peeler, thinly shave parmesan and add to the bowl with walnuts.

Drizzle extra virgin olive oil and balsamic vinegar over the salad.  Add salt and pepper to taste and lightly toss all ingredients before serving.


Variation:

I have successfully made this salad with blue cheese instead of parmesan.  The blue cheese gives the salad a stronger and bolder flavour.
